No Knead Multi-Seeded Loaf

Rest time 7 hours 25 minutes

Ingredients
  

Active Yeast

  • 200 ML Full fat Milk
  • 1 Tsp Active Dried Yeast
  • 3 Tbsp Sugar
  • 1 Egg

Seeded Mix

  • 2 Tbsp Flaxseeds
  • 1 Tbsp Sesame Seeds
  • 1 Tbsp Nigela Seeds
  • 2 Tbsp Pumkin Seeds
  • 2 Tbsp Sunflower Seeds
  • 2 Tbsp Rolled Oat

Dry Ingredients

  • 315 Grams Plain Flour
  • 2 Tbsp Milk Powder
  • 1 Tsp Salt
  • 50 Grams Soft Butter

Topping

  • 1 egg yolk
  • 1 Tbsp Remaining Seeded mix
  • 1 Tbsp Melted Salted Butter
  • 1 Tbsp Honey
  • 1/2 Tsp Sea Salt

Instructions
 

  • Pour 200ml warm milk into a bowl and sprinkle over the yeast and sugar. Stir well until sugar and yeast get dissolved. Cover and leave at room temperature for 25 minutes or until bubble form on the surface of the bowl.
  • Add 1 egg to the activated yeast mixture. And Mix.
  • Mix all dry ingredients togther.
  • Combine all wet ingredients togther including the seeded mix ( making sure to leave 1 tbsp of the seeded mix at a side for the topping.) and add the butter slowly while mixing. Once everything is combined cover and rest at room temperature for 6 hours.
  • Once the dough has been proofed, punch the dough then pull and stretch the dough from the sides of the bowl. Transfer it to baking vessel. Cover the pan with cling film Make the dough rest for the second proofing. (1 hour)
  • Once the dough has doubled in size. Brush it with egg yolk melted butter and honey and sprinkle the remaining seeds we set aside.
  • Bake for 35 min at 200C.
  • Once Out of the oven place it on a rack to cool down for 20 minutes before slicing.
