Vegan tahini & wild rice salad – veganuary
Ingredients
Wild rice
- 1 Cup Wild Rice
- 1 Tbsp Vegetable oil
- 1 Vegetable Stock
- 1 Tsp Turmeric
- 1 Tsp Salt
- 2 Cups Water
Salad dressing
- 1 Cup Vegan Yogurt
- 1/2 Cup Tahini
- 1 Tbsp Water
- 1 Tbsp Sumac
- 1 Tbsp Dry Mint
- 1 Tsp Salt
Salad
- 1/2 Red Cabage finely sliced
- 2 Carrots Shredded
- 2 Tomatoes finely chopped
- 3 Spring onions finely chopped
- 1/2 english cucumber finely chopped
Instructions
- In a saycepan add 1 tsp of oil and turmeric cook for half a minute then add the rice and salt and mix.
- desolve the vegetable stock in boiling water and add to the wild rice. Once the water start to boil in the saucepan lower the heat, add the lid and cook for 15minutes.
- In a small bowl mix all the salad dressing ingredients togther .
- In a large bowl add the rice, the vegetables and the salad dressing. Mix and serve.
- will last in the fridge for upto a week.
