Instructions
Start by beating the soft butter and 2 sugars on high speed until pale in colour and fluffy.
Whisk in the eggs. Once mixed add in the dry mix, then the porridge followed by the golden raisins.
Mix until the dough is stiff.
Place the cookie dough in the fridge from 30 to 45 minutes.
Preheat the oven to 200C
Place 100g to 120g of dough into a baking tray and press down slightly to form a cookie shape. the cookies won't spread much as normal cookies.
Sprinkle some porridge oat on top and bake for 15 to 20 minutes.
Leave them to cool down for 15 minutes before eating
They will freeze well for up to 3 months
