Ingredients
  

  • 1 Cup Barley
  • 2 Cups Boiling water
  • 1 Handful Rocket
  • 1/4 Block Feta cheese
  • 1/4 Cup walnuts
  • 1 Cup Cooked Beetroot

Salad dressign

  • 1 Large Garlic
  • 1/2 Lemon Zest
  • 1 Lemon Juice
  • 1 Tsp Honey
  • 1 Tbsp Pesto
  • 1 Tbsp Olive Oil
  • 1 Tbsp Water
  • 1/2 Tsp Salt
  • 1/2 Tsp Black pepper

Instructions
 

  • Leave the barley to cool down for 15 min before adding salad dressing & the Feta cheese
