Start by slicing your aubergine into cubes. Coat the aubergine with oil and place in the air fryer for 15 minutes on 200C.
In a saucepan add your olive oil followed by 10 large garlic. making sure the stove is on medium to low heat so we won't burn the olive oil Cook the garlic for 4 minutes.Add 500g of chopped cherry tomatoes and continue to cook them for 10 minutes on medium heat.Once soften add your chopped red peppers and continue to cook until a lot of liquid has come out of the tomatoes.Add your cooked aubergine. your sea salt and your tomato paste.Mix everything then add 2 cups of large bulgur grains and 4 cups of boiling water.Mix everything together, close the lid and cook for 20 to 5 minutes on low heat.Serve and enjoy.
