Lebanese Lentil and lemon soup

Ingredients
  

  • 300 grams Swiss Chards
  • 4 Chopped medium potatoes
  • 600 Grams Dark Lentil
  • 2 Liters Water
  • 2 Tbsp Olive oil
  • 4 Chopped white onion
  • 100 Grams Chopped Coriander
  • 1 Tbsp Olive oil
  • 1 Cup Lemon juice
  • 5 Chopped garlic
  • 1 Tbsp Sea Salt

Instructions
 

  • Start by chopping and cleaning the swiss chard.
  • Once cleaned and dry add it to a large sauce pan with the chopped potatos and lentils and boil them until lentil and potatoes has softened.
  • In frying pan start by sauteing your onions until softened. then add your coriander and cook for another 2 minutes. then add to the soup with 1 cup of lemon juice and mix.
  • In the same pan add olive oil and the chopped garlic and fry until brown then add to the soup.
  • Season to taste. Boil the soup for another 5 minutes before serving.
