Lebanese Lentil and lemon soup
Ingredients
- 300 grams Swiss Chards
- 4 Chopped medium potatoes
- 600 Grams Dark Lentil
- 2 Liters Water
- 2 Tbsp Olive oil
- 4 Chopped white onion
- 100 Grams Chopped Coriander
- 1 Tbsp Olive oil
- 1 Cup Lemon juice
- 5 Chopped garlic
- 1 Tbsp Sea Salt
Instructions
- Start by chopping and cleaning the swiss chard.
- Once cleaned and dry add it to a large sauce pan with the chopped potatos and lentils and boil them until lentil and potatoes has softened.
- In frying pan start by sauteing your onions until softened. then add your coriander and cook for another 2 minutes. then add to the soup with 1 cup of lemon juice and mix.
- In the same pan add olive oil and the chopped garlic and fry until brown then add to the soup.
- Season to taste. Boil the soup for another 5 minutes before serving.
