Lebanese Savoury Pancake – Ijeh

Bringing from the Middle-east this tasty and healthy savoury pancake.
We call it “Ijeh” in Lebanon.

I remember when I was a little girl, every Friday my grandma use to make 100’s of them savoury pancakes “Ijeh”
and give them to my dad and uncles to take with them when going hunting in the mountains.

I remember the smell of the fresh dill surrounding the whole house and the garden. I will know instantly if its hunting season if the house and street smelled of dill.
Now, whenever I go to Asda, Tesco or Morrisons I walk past the vegetable and herb aisle and Smell the dill, this smell will take me back instantly to when I was a child helping my grandma making them delicious pancakes.

Now Whenever my boyfriend Dan has a racing season coming I make sure I have the ingredients with me in a little container ready to be made fresh for lunch or dinner.
it can last for 3 days without a fridge so if you are going on a camping weekend or you meal prepping your lunch for work consider making these.

and if you are a meat-eater hold a min and before you judge it gives it a try. I have converted lots of people before as I tent to make them pancake thick, rich with flavour and satisfying to the tummy! Basically, you can’t say no LOL!
I could literally talk about my childhood memory with them pancakes for ages but let’s just stop, for now, I am sure you are as excited as me to make them pancake so here you go my lovely MeMes the recipe πŸ™‚

Lebanese Savoury pancake -Ijeh

Ingredients

  • 4 Medium Eggs
  • 1 Cup Flour
  • 1 Spring Onion
  • 1/2 Onion
  • 1 Tsp Arabic 7 spice
  • 2 Tbs Olive Oil
  • 1 Cup Shopped Dill
  • 4 Olives
  • 4 Shopped Dried Tomatos
  • 1 Pinch Salt/Pepper

Instructions

  • Add and whisk all the ingredients together until smooth exceptolive and dried tomatoes!!
     
  • Set a medium frying pan or pancake pan over medium heat and carefully wipe it with some oiled kitchen paper.
  • When hot, cook your pancakes for 1 min on each side until golden.
  • When done add the olives and the tomatoes on top and serve.

If you don’t have a pancake pan consider investing in one they will make life so much easier ask me I didn’t do it in a pancake pan in this video and I struggled a little LOL!
