Get rid off all the unnecessary refined sugar by making your own homemade sugar free strawberry jam! This simple recipe makes an incredibly fruity jam using only natural sugar and it’s suitable for everyone.
So if you have a sweet tooth like me and want a healthy alternative, you came to the right place my friend.

Did you know that traditional strawberry jam recipes use around 800g of sugar for every 1 kilo of strawberry! I have always wondered why this is necessary. Ripe fruit contains natural sweetness already.

The sugar is supposed to help with the gelling of the fruit, making the jam nice and thick but today we are going to use chia Seeds to naturally thicken our strawberry jam.

Ingredients
  

Simple Vanilla Cake recipe

  • 90 ML Vegetable oil
  • 180 ML Water
  • 3 Mediem Eggs
  • 175 Gram Self-raising Flour
  • 175 Gram Caster Sugar
  • 1 Tsp Vanilla Extract
  • 1 Pinch of salt
  • 1 Tsp Baking Powder

Filling & decoration

  • 2 TBSP Mackays Scotish Stawbeery Jam
  • 1 Block Aldi & Vanilla white chocolate

Instructions
 

  • Mix the Wet Ingredients and the dry ingredients separately then combine and mix gently together and whisk (by hand or electric mix if you have one) for 3 minutes until you achieve a smooth creamy texture
  • Pour the cake mixture evenly into your greased cake tin and make sure you hit the tin lightly on the surface of the kitchen to get rid off all the trapped air in the mixture.
  • Bake in the centre of the oven for between 22-27 minutes or until a rounded knife inserted fully into the centre of the cake comes out clean.
  • Once the cake is out, cool it on a wire rack for 10 minutes
