Dark Chocolate & Ginger Granola bars

Ingredients
  

  • 150 Grams Unsalted Butter
  • 250 Grams Rolled Oats
  • 75 Grams ground Almonds
  • 75 Grams Flaked Almonds
  • 140 Grams Dried Cranberries
  • 15 Grams Fresh Grated Ginger
  • 50 Grams Ginger Syrup
  • 1 Tsp Ground Ginger
  • 150 Grams Agave Syrup
  • 75 Grams Caster Sugar
  • 150 Grams Dark Chocolate
  • 40 Grams Crystalised Ginger

Instructions
 

  • Preheat the oven to 170C and grease and line a sqyre tin.
  • Start by combining the dry ingredients togther (oats, ground and flaked almonds, along with the cranberries) in a bowl
  • In a saucepan, combine the butter, ginger, agave syrup and sugar then place over medium heat until everything has melted together.
    Pour over wet ingredients onto the dry and mix well.
    Tip the mixture into the tin pressing down so it gets right into all the corners making sure the granola is all levelled out.
  • Bake in the oven for 30 to 35 minutes. Once taken out allow to cool completely for up to hours before cutting. Once cut freeze for few hours before adding melted chocolate and crysallied ginger.
  • Melt chocolate in a bowl and finley chop crystalised ginger. Dunk each bar lengthways into the chocolate and coat one half of the bar. allow any axcess to drip off and sprinkle the crystalised ginger on top. once chocolate is fully set serve and enjoy .

Ingredients
  

  • 1 Cup Oat
  • 1 Cup Dried Cranberries
  • 1 Cup Almonds

Wet ingredients

  • 3 Tbsp Vegetable Oil
  • 1 Cup Peanut Butter
  • 1 Cup Brown Sugar
  • 1 Tsp salt
  • 1 Tbsp Water
  • 1 Egg White

Instructions
 

  • In a bowl start by adding all the dry ingredients and mix.
  • In a saucepan add all the wet ingredients including the sugar except the eggs. Once the wet ingredients are fully melted and incorporated take them off the heat and leave them to cool down for 5 minutes before adding the egg whites.
  • Add the egg whites while constantly whisking making sure not to cook the egg whites.
  • Combine all the ingredients togther spread on a baking tray and bake for 30minutes on 180C.
  • Leave for 20 to 30 minutes before cutting. Enjoy !

  • 150 Gram Salted Butter
  • 100 Gram Caster sugar
  • 50 Gram Light Brown Sugar
  • 2 Eggs
  • 300 Gram Plain Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Cinnamon
  • 100 Gram Golden Raisins
  • 180 Gram Cooked Porridge or Overnight Oat
  • 2 Tbsp Porridge Oat

Instructions
 

  • Start by beating the soft butter and 2 sugars on high speed until pale in colour and fluffy.
  • Whisk in the eggs. Once mixed add in the dry mix, then the porridge followed by the golden raisins.
  • Mix until the dough is stiff.
  • Place the cookie dough in the fridge from 30 to 45 minutes.
  • Preheat the oven to 200C
  • Place 100g to 120g of dough into a baking tray and press down slightly to form a cookie shape. the cookies won't spread much as normal cookies.
  • Sprinkle some porridge oat on top and bake for 15 to 20 minutes.
  • Leave them to cool down for 15 minutes before eating
  • They will freeze well for up to 3 months
  • Enjoy.

Stuffed chocolate date balls

Ingredients
  

Date balls

  • 500g Date Paste
  • 1 Orange zest
  • 100g Coco Powder
  • 1 Tsp Sea Salt

Walnut butter

  • 2 Cups Wallnuts
  • 2 Tbsp Water

Coating

  • 1 Cup Desiccated Coconut
  • 1 Tbsp Salted Caramel Dusting Sugar (Tesco)
  • 1/2 Tsp Cinamon Powder

Instructions
 

  • In a mixer start by adding the date paste followed by orange zest, coca powder and sea salt. mix in a kitchen aid or by hand until its all combined.
  • For the wallnuts blend the wallnuts while gradually adding the water until you get a creamy paste.
  • for the coating mix everything togther and follow my instructioon on the video to how to make the date balls.
    Start by measuring the date mix, it needs to be around 50g. Once measured roll the paste into a ball and poke a whole in the middle using your finger. Place 5 to 10 grams of wallnuts paste inside and close and reshape int a ball.
    Roll it with the coconut mix we made earlier.
  • Place the date balls in the fridge for few hours before serving.

Ingredients
  

  • 100 g Unsalted butter
  • 1 Cup Milk chocolate
  • 1/2 Cup Condensed Milk
  • 1 Tbsp Coco Powder
  • 70 g Marshmallow
  • 300 g Digestive biscuits or rich tea biscuits
  • 30 g Salted pistachio
  • 15 Raisins
  • 200 half dark Chocolate half milk chocolate

Instructions
 

  • In a sauce pan one a low heat start by melting the butter. Once melted add 1 cup of chopped milk chocolate.
  • Once the chocolate has melted add the condensed milk, cocoa powder and marshmellow.
  • Keep mixing until everything is melted.
  • crush the digestive and chopp the pistachip and raisins.
  • One everything is melted add it on top of the biscuit and nuts mix and mix until everything is combined.
  • Spread it on a tray and leave it to cool down in the fridge for 30 minutes to 1hr.
  • Melt chocolate and spread it on top and leave it in the fridge for hours.
  • Slice and enjoy.
