Creamy Chicken and Mushroom curry

Ingredients
  

Curry Paste

  • 1 Cup Tomato Paste
  • 1/8 Cup Oil
  • 1 Tbsp Toasted Ground Coriander Powder
  • 1 Tbsp Ground Cumin Seeds
  • 1/2 Tbsp Ground Turmeric
  • 1/2 Tbsp Plain Flour
  • 1 Tsp Ground Cardamon Seeds
  • 1 Tsp Ground Mustard Seeds
  • 1 Tsp Ground Fennel Seeds
  • 1 Tsp Ground Fenugreek
  • 1 Tsp Ground Paprika
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Tsp Ground Ginger
  • 1 Tsp Chilli Powder
  • 1 Tsp Sugar
  • 1 Tsp Salt

Curry

  • 3 Tbsp Vegetable Oil
  • 8 Chicken Thighs
  • 1 Vegetable Stock
  • 1/2 Lemon Juice
  • 1 Tbsp Liquid Seasoning
  • 2 Large Diced Leek
  • 2 Cups Sliced Mushrooms
  • 5 Minced Garlic
  • 4 Frozen Spinach Blocks
  • 900 ML Double Cream
  • Sprinkle Paprika
  • Sprinkle Masala
  • Sprinkle Coriander

Instructions
 

Curry paste

  • Start by Toasting all the spices and blend. Mix with tomato paste and oil until a paste is created.
    Store in an air-tight container and use whenever. Will last for over a month in the fridge.

Curry

  • In a saucepan start by frying your chicken thighs for 2 minutes on each side. While frying adds 1 vegetable stock and half lemon juice.
    After 4 minutes place the chicken on a plate making sure not to get rid of any chicken juices.
    In the same pan start sauteing your leeks, mushrooms. once Soft add the garlic and sauté for another minute.
    Add spinach block and cook until all the spinach has soften. Add the curry paste and mix and cook for 5 minutes.
    Add the chicken back in the pan followed by any chicken juice on the plate.
    Add 900 ml of double cream and cook for 30 minutes. Once cooked sprinkle paprika, masala powder and chopped coriander.
    Serve and enjoy.

  • 300 grams Swiss Chards
  • 4 Chopped medium potatoes
  • 600 Grams Dark Lentil
  • 2 Liters Water
  • 2 Tbsp Olive oil
  • 4 Chopped white onion
  • 100 Grams Chopped Coriander
  • 1 Tbsp Olive oil
  • 1 Cup Lemon juice
  • 5 Chopped garlic
  • 1 Tbsp Sea Salt

Instructions
 

  • Start by chopping and cleaning the swiss chard.
  • Once cleaned and dry add it to a large sauce pan with the chopped potatos and lentils and boil them until lentil and potatoes has softened.
  • In frying pan start by sauteing your onions until softened. then add your coriander and cook for another 2 minutes. then add to the soup with 1 cup of lemon juice and mix.
  • In the same pan add olive oil and the chopped garlic and fry until brown then add to the soup.
  • Season to taste. Boil the soup for another 5 minutes before serving.

  • 150 Grams Unsalted Butter
  • 250 Grams Rolled Oats
  • 75 Grams ground Almonds
  • 75 Grams Flaked Almonds
  • 140 Grams Dried Cranberries
  • 15 Grams Fresh Grated Ginger
  • 50 Grams Ginger Syrup
  • 1 Tsp Ground Ginger
  • 150 Grams Agave Syrup
  • 75 Grams Caster Sugar
  • 150 Grams Dark Chocolate
  • 40 Grams Crystalised Ginger

Instructions
 

  • Preheat the oven to 170C and grease and line a sqyre tin.
  • Start by combining the dry ingredients togther (oats, ground and flaked almonds, along with the cranberries) in a bowl
  • In a saucepan, combine the butter, ginger, agave syrup and sugar then place over medium heat until everything has melted together.
    Pour over wet ingredients onto the dry and mix well.
    Tip the mixture into the tin pressing down so it gets right into all the corners making sure the granola is all levelled out.
  • Bake in the oven for 30 to 35 minutes. Once taken out allow to cool completely for up to hours before cutting. Once cut freeze for few hours before adding melted chocolate and crysallied ginger.
  • Melt chocolate in a bowl and finley chop crystalised ginger. Dunk each bar lengthways into the chocolate and coat one half of the bar. allow any axcess to drip off and sprinkle the crystalised ginger on top. once chocolate is fully set serve and enjoy .

  • 1 Cup Oat
  • 1 Cup Dried Cranberries
  • 1 Cup Almonds

Wet ingredients

  • 3 Tbsp Vegetable Oil
  • 1 Cup Peanut Butter
  • 1 Cup Brown Sugar
  • 1 Tsp salt
  • 1 Tbsp Water
  • 1 Egg White

Instructions
 

  • In a bowl start by adding all the dry ingredients and mix.
  • In a saucepan add all the wet ingredients including the sugar except the eggs. Once the wet ingredients are fully melted and incorporated take them off the heat and leave them to cool down for 5 minutes before adding the egg whites.
  • Add the egg whites while constantly whisking making sure not to cook the egg whites.
  • Combine all the ingredients togther spread on a baking tray and bake for 30minutes on 180C.
  • Leave for 20 to 30 minutes before cutting. Enjoy !

  • 150 Gram Salted Butter
  • 100 Gram Caster sugar
  • 50 Gram Light Brown Sugar
  • 2 Eggs
  • 300 Gram Plain Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Cinnamon
  • 100 Gram Golden Raisins
  • 180 Gram Cooked Porridge or Overnight Oat
  • 2 Tbsp Porridge Oat

Instructions
 

  • Start by beating the soft butter and 2 sugars on high speed until pale in colour and fluffy.
  • Whisk in the eggs. Once mixed add in the dry mix, then the porridge followed by the golden raisins.
  • Mix until the dough is stiff.
  • Place the cookie dough in the fridge from 30 to 45 minutes.
  • Preheat the oven to 200C
  • Place 100g to 120g of dough into a baking tray and press down slightly to form a cookie shape. the cookies won't spread much as normal cookies.
  • Sprinkle some porridge oat on top and bake for 15 to 20 minutes.
  • Leave them to cool down for 15 minutes before eating
  • They will freeze well for up to 3 months
  • Enjoy.
