Mediterranean Vegetable & creamy garlic Bulgur recipe

Ingredients
  

Roast Aubergine

  • 2 Medium Aubergine
  • 1 Tbsp Vegetable Oil

Vegetables

  • 2 Tbsp Olive Oil
  • 10 Large Garlic
  • 500g Red cherry tomatoes
  • 2 Red Peppers
  • 1/2 Tub Tomato Paste
  • 1 Tbsp Sea Salt
  • 2 Cups Large grains of Bulgur
  • 4 Cups Boiling Water.

Instructions
 

  • Start by slicing your aubergine into cubes. Coat the aubergine with oil and place in the air fryer for 15 minutes on 200C.
  • In a saucepan add your olive oil followed by 10 large garlic. making sure the stove is on medium to low heat so we won't burn the olive oil Cook the garlic for 4 minutes.
    Add 500g of chopped cherry tomatoes and continue to cook them for 10 minutes on medium heat.
    Once soften add your chopped red peppers and continue to cook until a lot of liquid has come out of the tomatoes.
    Add your cooked aubergine. your sea salt and your tomato paste.
    Mix everything then add 2 cups of large bulgur grains and 4 cups of boiling water.
    Mix everything together, close the lid and cook for 20 to 5 minutes on low heat.
    Serve and enjoy.

Fatoush Salad

  • 2 lettuce
  • 3 Tomato
  • 2 Red Onions
  • 1 Full Large English Cucomber
  • 4 Rdishes
  • 2 Tbsp Olive Oil
  • 2 Lemon juice
  • 1 Tsp Dry mint
  • 1 Tsp Salt
  • 1 Tbsp Pomegranate Molases
  • 1 Tsp Sumac

Modardara

  • 1 Cup Brown lentils
  • 2 Cups Boiling Water
  • 2 Cups Long Grain Rice
  • 1 Tbsp Sea Salt
  • 3 Large Onions
  • 1 Cup Vegetable Oil

Optional Ingredients

  • 1 Vegan Alpro Yogurt

Instructions
 

  • Start by boiling your lentil until fully soft but still keeping their shape.
  • Drain the lentil while making sure to keep the lentil water for later use.
  • Clean your rice 3 times making sure to use fresh water everytime you rinse.
  • Add the rice and lentil to a pan followed by the lentil water and salt bring to a boil then cover until they are fully cooked. it will take aproxmatly 15 minutes
  • In a frying pan add the vegetable oil followed by the onions and fry until golden and creapy.

  • Serve with the fatoush salad and vegan yogurt. Enoy !

Ingredients
  

Dressing

  • 1/8 Cup Extra virgin olive oil
  • 1 Tbsp Pomegranate Molasses
  • 1 Tsp Chalola sauce
  • 1/2 Lemon Juice
  • 1 Tsp Salt/ pepper
  • 1 Tsp Oregano
  • 2 Minced garlic
  • 1 Tbsp Date Syrup

Salad

  • 1 Red Onion
  • 2 Grilled peppers
  • 1 Cup Cooked dark lentils
  • 500g Blanched Cooked multi coloured Carrots

Instructions
 

  • To cook the lentils add 1 cup of lentils to 2 cups of boiling water and cook until all water evaporate and the lentil are easy to squash.
  • To blanch cook the carrots. strt by pealing them and boil them in salty water for 5 minutes then drain and toss them in icy water to stop the cooking process and keep their vibrant colour. drain and use in salad.
